As reported in Waiterform:
Kurtis Kolt has just announced that he will resign his post at Aurora Bistro, effective early October. He is focusing his efforts on starting a non-profit literary centre in Gastown.
Aurora Bistro will certainly miss Mr. Kolt’s services as he was instrumental in establishing its BC-only program and was always a great presence in the dining room.
In the interim, Kolt will be serving at Salt, the restaurant managed by Chris Stearns and Jay Jones. At this point we can pretty much call Salt the New York Yankees and Sean Heather, George Steinbrenner.
