Brunch featuring British Columbia Spot Prawns

This June FigMint Restaurant and Lounge Executive Chef Lee Humphries draws attention to just one of the local food products he is using with a very special weekend brunch menu highlighting BC Spot Prawns – Crepes with poached spot prawns, egg mimosa, horseradish béchamel and prawn essence; Salad of poached spot prawns and rhubarb, triple cream brie and micro basil; potato herb bread-pudding, asparagus, smoked butter with grilled spot prawns or poached spot prawns with melon, orange, tomato, cucumber and mint are just a few of the dishes accompanying the already outstanding weekend brunch menu. (see full prawn menu below and entire brunch menu attached) This special menu will be served again Saturday, June 7th and Sunday, June 8th. Brunch is served from 10:00 am to 3:00 pm.

FigMint is a relaxed fine dining restaurant known for modern European cuisine using fresh local and organic ingredients. British Chef Lee Humphries is an unsung hero using local wherever possible and producing some of the finest food in the city. Perched on the hill at 12th and Cambie, a souring view of the city is right outside their windows. The dining room is crisp and bright in the day and the elegant lines created by Evoke Design are defined by the evening light. The red suede seated lounge is low and relaxed with an all wine based cocktail program unique to the city and off to the side of the main dining room is the classically neutral middle room, perfect for a group gathering.
